Is it mandatory to get roles & responsibilities from his employer? If we don’t want to get the same, shall I not show the experience in EE profile ? TIA

For Spouse - only Canadian experience will give you points . So no need to show it in work history. Post ITA you can mention at personal history.

Post ITA your spouse will only need a work certificate nothing more is relevant since it doesn't give any additional points
