1) & 2) I guess Scotia have a standard format for IRCC, so request that letter where it would show all the types of your account with individual balances on their signed letterhead. 3) Not very sure but I believe it should validate the funds you mentioned, whether you provide statements from one or both banks.
For the letter format, inform them your purpose and show them the IRCC instructions. You are required to provide statements of the banks where your POF is maintained.
