My CRS would be around 480 if I get desired bands in IELTS. Shall I create my express entry profile right now or should I wait till I have 1 year of job experience?

You can always create the profile and improve your points while waiting in the pool. If your NOC is STEM you can get invited by OINP or in category based draw.
